Description

Bake classic thumbprint cookies with a sweet jam center. This simple recipe yields tender, buttery cookies perfect for beginners.


Ingredients

  • 0.5 tsp baking powder
  • 1 large egg (at room temperature)
  • 2 tsp pure vanilla extract
  • 1 cup white sugar
  • 1 cup salted butter (softened)
  • 2.5 cups all-purpose flour
  • 1 cup jam (raspberry or apricot recommended)


Instructions

  1. Preheat your oven to 325°F (165°C).
  2. In a mixer, cream the softened butter, white sugar, and baking powder on medium speed for 3 to 4 minutes until light and fluffy.
  3. Scrape down the bowl sides. Add the egg and beat until incorporated. Add the vanilla extract and mix.
  4. With the mixer on low speed, gradually add the all-purpose flour. Mix only until the ingredients are barely combined.
  5. Roll the dough into 1-inch balls. Place them 1 inch apart on a baking sheet.
  6. Use your thumb or a rounded tool to make an indentation in the center of each dough ball.
  7. Fill each indentation with jam, slightly overfilling each one.
  8. Bake for about 20 minutes. Rotate the baking sheet halfway through baking for even results.
  9. Let the cookies cool on the pan for a few minutes before moving them to a wire rack to cool completely to room temperature.
