Description

Crispy smashburger quesadillas with a creamy special sauce. A quick, family-friendly dinner packed with flavor.


Ingredients

  • 1 pound ground beef 80 percent lean
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 4 large flour tortillas
  • 2 cups shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 1 tablespoon vegetable oil
  • 1/2 cup mayonnaise
  • 2 tablespoons ketchup
  • 1 tablespoon yellow mustard
  • 1 tablespoon finely chopped dill pickles
  • 1 teaspoon sugar
  • 1 teaspoon white vinegar
  • 1 cup shredded lettuce
  • 1 medium tomato diced
  • 1/2 cup sliced pickles


Instructions

  1. In a small bowl, stir together mayonnaise, ketchup, mustard, chopped pickles, sugar, and vinegar until smooth. Set aside in the refrigerator.
  2. Divide the ground beef into 4 equal portions. Gently shape into loose balls.
  3. Heat a large skillet or griddle over medium-high heat. Lightly coat with vegetable oil.
  4. Place one beef ball onto the hot surface and press it flat to about one-quarter inch thickness. Season with salt, pepper, garlic powder, and onion powder.
  5. Cook for 2 to 3 minutes until edges are crisp, then flip and cook another 1 to 2 minutes until fully cooked through. Repeat with remaining beef.
  6. Reduce heat to medium. Place one tortilla on the skillet, sprinkle cheese over half of it, then add one smashed patty on top.
  7. Spoon special sauce over the patty, then add lettuce, diced tomato, and pickles.
  8. Fold the tortilla over and cook for 2 to 3 minutes per side until golden brown and crispy and the cheese is melted.
  9. Remove from heat and let rest for 1 minute before slicing. Repeat with remaining tortillas and filling.
  10. Serve warm with extra special sauce on the side.

Notes

  • For extra crispiness, press the quesadilla gently with a spatula while cooking.
  • Serve immediately for the best texture.
