Description
Crispy smashburger quesadillas with a creamy special sauce. A quick, family-friendly dinner packed with flavor.
Ingredients
- 1 pound ground beef 80 percent lean
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 4 large flour tortillas
- 2 cups shredded cheddar cheese
- 1 cup shredded mozzarella cheese
- 1 tablespoon vegetable oil
- 1/2 cup mayonnaise
- 2 tablespoons ketchup
- 1 tablespoon yellow mustard
- 1 tablespoon finely chopped dill pickles
- 1 teaspoon sugar
- 1 teaspoon white vinegar
- 1 cup shredded lettuce
- 1 medium tomato diced
- 1/2 cup sliced pickles
Instructions
- In a small bowl, stir together mayonnaise, ketchup, mustard, chopped pickles, sugar, and vinegar until smooth. Set aside in the refrigerator.
- Divide the ground beef into 4 equal portions. Gently shape into loose balls.
- Heat a large skillet or griddle over medium-high heat. Lightly coat with vegetable oil.
- Place one beef ball onto the hot surface and press it flat to about one-quarter inch thickness. Season with salt, pepper, garlic powder, and onion powder.
- Cook for 2 to 3 minutes until edges are crisp, then flip and cook another 1 to 2 minutes until fully cooked through. Repeat with remaining beef.
- Reduce heat to medium. Place one tortilla on the skillet, sprinkle cheese over half of it, then add one smashed patty on top.
- Spoon special sauce over the patty, then add lettuce, diced tomato, and pickles.
- Fold the tortilla over and cook for 2 to 3 minutes per side until golden brown and crispy and the cheese is melted.
- Remove from heat and let rest for 1 minute before slicing. Repeat with remaining tortillas and filling.
- Serve warm with extra special sauce on the side.
Notes
- For extra crispiness, press the quesadilla gently with a spatula while cooking.
- Serve immediately for the best texture.
