Ingredients

  • 1 1/4 cups creamy natural peanut butter
  • 1/3 cup almond flour
  • 1/4 cup powdered sugar
  • 1/4 cup maple syrup
  • 1/4 teaspoon fine sea salt
  • 10 ounces white chocolate melting wafers
  • 2 teaspoons coconut oil
  • Oil based blue food coloring
  • 1 teaspoon unsweetened cocoa powder
  • 1/2 teaspoon warm water


Instructions

  1. Line a large baking sheet with a piece of parchment paper.
  2. Mix the creamy peanut butter, almond flour, powdered sugar, maple syrup, and fine sea salt in a medium bowl until a cohesive dough forms.
  3. Wash hands thoroughly before rolling the peanut butter mixture into shapes.
  4. Scoop 2 tablespoons of the dough and roll it into a ball, then gently flatten and squeeze it into an oval egg shape.
  5. Place the shaped eggs onto the prepared baking sheet and freeze them for 30 minutes to firm up the filling.
  6. Stir the unsweetened cocoa powder and warm water together in a small cup to create a thin dark liquid for speckling.
  7. Combine the white chocolate wafers and coconut oil in a microwave-safe bowl.
  8. Microwave the chocolate in 30 second intervals, stirring vigorously between each heat cycle, until completely smooth and melted.
  9. Stir a few drops of oil based blue food coloring into the melted chocolate until you achieve a robin egg blue hue.
  10. Remove the eggs from the freezer and dip each one into the blue chocolate, tapping the fork against the bowl to remove excess coating before returning it to the baking sheet.
