Description

This onion jam is rich, sweet, and savory with deep caramelized flavor. It makes a perfect spread for burgers, grilled cheese, and wraps.


Ingredients

  • 4 large yellow onions thinly sliced
  • 3 tablespoons olive oil
  • 1 teaspoon kosher salt
  • 1 teaspoon sugar
  • 1 tablespoon apple cider vinegar
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon dried thyme
  • 1/4 cup water as needed


Instructions

  1. Heat a wide heavy skillet over medium heat and add olive oil.
  2. Add onions and salt and stir to coat evenly.
  3. Cook 12 minutes, stirring every 1 to 2 minutes, until onions are fully softened.
  4. Reduce heat to medium low and cook 30 minutes, stirring every few minutes, until onions are deep golden.
  5. Stir in sugar and cook 5 minutes until glossy and thick.
  6. Add apple cider vinegar and black pepper and stir well.
  7. Add thyme and cook 3 to 5 minutes until jammy and spoonable.
  8. Add water one tablespoon at a time only if onions begin sticking.
  9. Remove from heat and cool slightly before using.
