Description
This one pot Cajun chicken pasta is creamy, spicy, and loaded with tender chicken, peppers, and pasta in a rich flavorful sauce.
Ingredients
- 1 1/2 tablespoons olive oil
- 1 pound boneless skinless chicken breasts, cut into 1 inch pieces
- 1 1/2 tablespoons Cajun seasoning
- 1 medium red bell pepper, sliced
- 1 medium yellow bell pepper, sliced
- 1 small red onion, thinly sliced
- 2 cloves garlic, minced
- 2 cans low sodium chicken broth
- 1 can fire roasted diced tomatoes
- 3/4 cup heavy cream
- 12 ounces penne pasta
- 2 teaspoons cornstarch
- 1 tablespoon water
- 3/4 cup grated Parmesan cheese
- 3 tablespoons chopped fresh parsley
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- Heat 1 tablespoon olive oil in a large deep skillet or pot over medium high heat.
- Toss the chicken pieces with 1/2 tablespoon Cajun seasoning until evenly coated.
- Add the chicken to the skillet in a single layer and cook for 5 to 6 minutes, turning once, until browned and cooked through. The chicken should reach an internal temperature of 165 degrees F. Transfer to a plate and cover loosely.
- Add the remaining 1/2 tablespoon olive oil to the skillet.
- Add the bell peppers and red onion and cook for 3 to 4 minutes until slightly softened.
- Stir in the garlic and remaining Cajun seasoning and cook for 1 minute until fragrant.
- Pour in the chicken broth, diced tomatoes, and 1/2 cup heavy cream. Bring the mixture to a boil.
- Stir in the penne pasta and reduce the heat to medium. Cook uncovered for 12 to 13 minutes, stirring often, until the pasta is tender.
- In a small bowl, whisk together the cornstarch and water. Stir it into the pasta and cook for 1 minute until the sauce thickens slightly.
- Remove the skillet from the heat and stir in the remaining 1/4 cup heavy cream, Parmesan cheese, parsley, cooked chicken, salt, and black pepper.
- Let the pasta rest for 3 minutes before serving warm.
