Description

Easy no bake lime cheesecake cups with graham crust are creamy, tangy, and refreshing. A perfect dessert for warm days.


Ingredients

  • 1 and 1/2 cups graham cracker crumbs
  • 1/3 cup melted butter
  • 2 tablespoons granulated sugar
  • 8 ounces cream cheese softened
  • 1 cup heavy whipping cream cold
  • 2/3 cup powdered sugar
  • 1 tablespoon lime zest
  • 1/4 cup fresh lime juice
  • 1 teaspoon vanilla flavoring
  • 1/2 cup whipped cream
  • 1 tablespoon lime zest


Instructions

  1. Combine graham cracker crumbs, melted butter, and granulated sugar in a bowl. Mix until the texture resembles wet sand.
  2. Divide the mixture evenly into serving cups and press firmly into the bottom to form a crust layer. Place in the refrigerator to set while preparing the filling.
  3. Beat the softened cream cheese and powdered sugar in a large bowl until smooth and creamy.
  4. Add lime zest, lime juice, and vanilla flavoring, then mix until fully incorporated.
  5. Whip the cold heavy cream in a separate bowl to stiff peaks, about 3 to 4 minutes with a hand mixer.
  6. Gently fold the whipped cream into the cream cheese mixture until smooth and fluffy.
  7. Spoon or pipe the cheesecake filling over the chilled crusts, smoothing the tops.
  8. Refrigerate for at least 4 hours until set and firm.
  9. Before serving, top with whipped cream and sprinkle with lime zest.
