Ingredients
- 1 and 1/2 cups graham cracker crumbs

- 1 cup heavy whipping cream cold
- 2/3 cup powdered sugar
- 1 tablespoon lime zest
- 1/4 cup fresh lime juice
- 1 teaspoon vanilla flavoring
- 1/2 cup whipped cream
- 1 tablespoon lime zest
Instructions
- Combine graham cracker crumbs, melted butter, and granulated sugar in a bowl. Mix until the texture resembles wet sand.
- Divide the mixture evenly into serving cups and press firmly into the bottom to form a crust layer. Place in the refrigerator to set while preparing the filling.
- Beat the softened cream cheese and powdered sugar in a large bowl until smooth and creamy.
- Add lime zest, lime juice, and vanilla flavoring, then mix until fully incorporated.
- Whip the cold heavy cream in a separate bowl to stiff peaks, about 3 to 4 minutes with a hand mixer.
- Gently fold the whipped cream into the cream cheese mixture until smooth and fluffy.
- Spoon or pipe the cheesecake filling over the chilled crusts, smoothing the tops.
- Refrigerate for at least 4 hours until set and firm.
- Before serving, top with whipped cream and sprinkle with lime zest.

- For cleaner layers, chill the crust for 20 minutes before adding the filling.
