Ingredients
- 8 corn tortillas (6-inch size)
- 1 tablespoon cooking oil
- 8.5 ounces canned corn (drained)
- 1 1/2 cups cooked chicken, shredded
- 8 ounces salsa
- 2 tablespoons taco seasoning mix
- 15 ounces black beans (rinsed and drained)
- 2 cups shredded colby jack cheese
- Fresh cilantro leaves
- Tomatoes
Instructions
- Preheat oven to 450 degrees Fahrenheit. Brush both sides of corn tortillas with cooking oil and place on a baking sheet. Bake for 10 minutes, flipping halfway through, until crispy.
- In a saucepan over medium heat, combine shredded chicken, salsa, taco seasoning, drained corn, and rinsed black beans. Cook, stirring occasionally, until heated through, about 5 minutes.
- Remove baked tortillas from the oven. Spoon the chicken mixture onto each tortilla, then top with shredded cheese.
- Return tortillas to the oven and bake for another 5 minutes, or until the cheese is melted and bubbly.
- Garnish with fresh cilantro leaves and diced tomatoes. Serve immediately.
