Description

Make soft, chewy pretzel buns with a golden crust and fluffy inside. Perfect for sandwiches, burgers, or snacking—easy to make at home.


Ingredients

  • 1 1/4 cups warm water (about 110°F)
  • 2 1/4 teaspoons active dry yeast
  • 1 teaspoon granulated sugar
  • 1/4 cup unsalted butter, melted and cooled
  • 3 1/2 cups all-purpose flour, spooned and leveled
  • 2 teaspoons salt
  • 1/2 tablespoon vegetable oil (for greasing bowl)
  • 6 cups water (for boiling)
  • 1/2 cup baking soda
  • Coarse sea salt for topping


Instructions

  1. Combine warm water, yeast, and sugar in a measuring cup. Stir gently and let sit for 10 minutes until foamy.
  2. In a large bowl or stand mixer, combine flour and salt. Add the yeast mixture and melted butter.
  3. Mix on low speed or by hand until a dough forms. Knead for 6–7 minutes until smooth and elastic.
  4. Lightly oil a clean bowl and place the dough inside, turning to coat. Cover with plastic wrap and a towel. Let rise in a warm spot for 1 hour or until doubled in size.
  5. Punch down the dough and divide it into 8 equal pieces. Shape each into a smooth ball by tucking edges underneath and rolling under your palm until tight.
  6. Place the dough balls on a parchment-lined baking sheet. Cover and let rest for 20 minutes while preheating oven to 425°F.
  7. Bring 6 cups of water and baking soda to a boil in a large pot. Gently drop 2 buns at a time into the boiling water and cook for 30 seconds per side. Remove with a slotted spoon and return to the baking sheet.
  8. Use a sharp knife to score an “X” on top of each bun. Sprinkle generously with coarse salt.
  9. Bake for 20–22 minutes until deep golden brown. Let cool slightly before serving.
