Description

Rich, creamy homemade vanilla pudding made from scratch with simple ingredients for a classic comforting dessert.


Ingredients

  • 3 cups whole milk divided
  • 3 tablespoons cornstarch
  • Pinch of salt
  • 3/4 cup granulated sugar
  • 3 large egg yolks
  • 1 tablespoon unsalted butter
  • 1 vanilla bean split and seeds scraped


Instructions

  1. Whisk 1/4 cup of the milk and the cornstarch in a small bowl until smooth. Set aside.
  2. Whisk the remaining milk, sugar, and salt in a medium saucepan. Heat over medium heat until steaming but not boiling.
  3. Whisk the egg yolks in a separate bowl. Slowly pour about 1/2 cup of the hot milk mixture into the yolks while whisking constantly.
  4. Pour the warmed egg mixture back into the saucepan, then whisk in the cornstarch mixture.
  5. Cook over medium heat, whisking constantly, until the pudding thickens and begins to gently bubble, about 7 to 10 minutes.
  6. Remove from heat and whisk in the butter and vanilla bean seeds until smooth.
  7. Pour the pudding into serving dishes. Press plastic wrap directly onto the surface to prevent a skin from forming.
  8. Serve warm or refrigerate until chilled and set.
