Description
These frozen strawberry mockaritas blend berries, lime, and fizzy soda into the perfect bright pink drink. Easy, refreshing, and ready in 10 minutes for any gathering.
Ingredients
- 3 cups frozen strawberries
- 1 cup fresh strawberries hulled and halved
- 1/3 cup granulated sugar or to taste
- 1/3 cup fresh lime juice
- 1/2 cup cold water
- 2 cups ice cubes
- 1 1/2 cups chilled lemon-lime soda
- Lime wedges for garnish
- Fresh strawberry slices for garnish
- Coarse sugar for rimming glasses optional
Instructions
- Prepare glasses by running a lime wedge around the rims and dipping them into coarse sugar if using. Set glasses in the refrigerator to chill.
- Add frozen strawberries, fresh strawberries, granulated sugar, fresh lime juice, and cold water to a high speed blender.
- Blend on medium-high until the strawberries are mostly smooth and the mixture is thick and bright pink, scraping down the sides if needed.
- Add the ice cubes to the blender and blend again until the drink reaches a thick, slushy consistency that holds soft peaks but still pours easily.
- Pour in the chilled lemon-lime soda and pulse the blender a few times just until the drink is evenly combined and still bubbly. Avoid overblending.
- Taste and adjust sweetness or tartness with more sugar or lime juice if needed, blending briefly after each adjustment.
- Immediately pour the frozen strawberry mixture into chilled glasses, filling each almost to the top so the slush mounds slightly above the rim.
- Garnish each glass with a lime wedge and a fresh strawberry slice on the rim. Serve right away while the drink is frosty. Keep ingredients refrigerated at 40°F or below before blending.
Notes
- Replace part of the frozen strawberries with frozen mixed berries for a deeper berry flavor.
- Use a zero sugar lemon-lime soda or flavored sparkling water to reduce added sugar.
- Swap granulated sugar with honey or agave for a different sweetness profile.
- Add a handful of fresh basil or mint leaves for a fragrant herbal twist.
- Blend in 1/2 cup coconut water instead of plain water for a tropical note.
- Make it creamy by replacing 1/2 cup of water with vanilla yogurt and reducing ice slightly.
- Use mostly frozen strawberries to create thickness without watering down the flavor.
- Pulse after adding soda to protect the bubbles and keep the drink lively.
- If the mixture is too thick to pour, blend in a splash more soda or cold water.
- Store leftover strawberry mixture in an airtight container in the refrigerator for up to 24 hours; reblend with ice if desired. Do not freeze and thaw or reheat.
