Ingredients

  • 1 prepared 9 inch pie crust baked and cooled
  • 5 cups fresh strawberries hulled and halved
  • 3/4 cup granulated sugar
  • 1/4 cup cornstarch
  • 1/2 cup water
  • 1 tablespoon lemon juice


Instructions

  1. Arrange the fresh strawberries evenly in the cooled pie crust and set aside.
  2. In a medium saucepan, whisk together the sugar and cornstarch until well combined.
  3. Add the water and lemon juice and cook over medium heat, whisking constantly.
  4. Bring the mixture to a gentle boil and cook for 2 to 3 minutes until thick, glossy, and translucent.
  5. Remove the glaze from the heat and let it cool for 5 minutes so it is warm but not hot.
  6. Pour the glaze evenly over the strawberries, using a spoon to gently coat and fill gaps.
  7. Refrigerate the pie uncovered for at least 3 hours until fully chilled and set.
  8. Slice and serve cold.
