Description
Everything Bagel Crispy Smashed Potatoes deliver maximum crunch and flavor using a simple two-step cooking process. These potatoes are boiled, smashed flat, and then roasted until golden brown, coated in savory Everything Bagel seasoning for an addictive side dish.
Ingredients
- 2 pounds baby gold or red potatoes, 1–2 inches each
- 3 tablespoons olive oil, divided
- 2 tablespoons Everything Bagel seasoning
- 1 teaspoon fine sea salt, divided
- 1/4 teaspoon garlic powder
- 1/4 teaspoon onion powder
- Freshly ground black pepper, to taste
- 2 tablespoons chopped fresh chives or parsley, for serving (optional)
Instructions
- Place potatoes in a large pot, cover by 1 inch of water, and add 1 tablespoon salt; bring to a boil and cook until very easily pierced with a fork, 20–25 minutes depending on size.
- Set oven to 425°F (220°C) and brush 1 tablespoon olive oil over a large rimmed baking sheet to coat evenly.
- Drain potatoes and let cool 5 minutes until safe to handle so they steam off excess moisture for better crisping.
- Arrange potatoes on the oiled baking sheet and gently smash each to about 1/2 inch thick; thinner equals crispier edges.
- Drizzle remaining 2 tablespoons olive oil over potatoes, then sprinkle garlic powder, onion powder, remaining pinch of salt, and black pepper evenly.
- Generously sprinkle the Everything Bagel seasoning over all potatoes so each surface has a good coating.
- Bake 25–30 minutes until edges are deep golden and crisp; for extra crunch, broil 2–3 minutes at the end if desired, watching closely.
- Sprinkle with chopped chives or parsley and serve hot with your favorite dip like garlic-herb yogurt or sour cream.

- For the crispest results, ensure the potatoes are smashed to about 1/2 inch thickness.
