Description
This is the best easy mini cookies recipe ever, perfect for beginners. These small, soft, and chewy cookies are a delightful treat, especially when made with chocolate chips. You can easily make a large batch of about 100 cookies, and the dough is perfect for making ahead and freezing.
Ingredients
- 1 cup softened butter
- 1 cup sugar
- 1 teaspoon vanilla extract
- 2 eggs
- 2 teaspoons baking powder
- 4 cups all-purpose flour
- 1 cup chocolate chips
Instructions
- Preheat oven to 350 °F (175 °C).
- In a large bowl, cream together butter and sugar until light and fluffy (about 3–5 minutes).
- Add eggs and vanilla extract; mix until fully combined.
- In a separate bowl, whisk together baking powder and flour.
- Gradually add the dry ingredients to the wet mixture on low speed until a dough forms.
- Fold in chocolate chips with a spatula for even distribution.
- Line baking sheets with parchment paper. Using a small cookie scoop or a tablespoon, drop small rounded balls of dough onto the sheets, spacing them since they will spread.
- Bake for 10–12 minutes until edges are lightly golden (centers may appear slightly underbaked but will firm up while cooling).
- Let cookies cool on baking sheets for about 5 minutes before transferring to a wire rack to cool completely.
Notes
- Store cooled mini cookies in an airtight container at room temperature for up to one week.
- Freeze baked cookies in a freezer-safe bag or container for up to three months; thaw at room temperature before serving.
