Description

Golden, crispy ranch roasted potatoes seasoned with herbs and garlic. A quick, flavor-packed side dish that pairs perfectly with any main course.


Ingredients

  • 2 pounds baby gold or red potatoes, halved
  • 3 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried dill
  • ½ teaspoon dried parsley
  • ½ teaspoon smoked paprika
  • 1 teaspoon kosher salt
  • ½ teaspoon black pepper
  • 2 tablespoons grated parmesan cheese (optional)
  • 1 tablespoon chopped fresh chives, for garnish


Instructions

  1. Preheat oven to 425°F. Line a large baking sheet with parchment paper.
  2. In a large mixing bowl, combine olive oil, garlic powder, onion powder, dill, parsley, paprika, salt, and black pepper.
  3. Add potatoes and toss until evenly coated in the seasoning mixture.
  4. Spread potatoes in a single layer on the prepared sheet, cut side down.
  5. Roast for 25 to 30 minutes, flipping halfway through, until golden and crisp.
  6. Remove from oven, sprinkle with parmesan if using, and toss gently.
  7. Transfer to a serving bowl and garnish with chopped chives. Serve hot.

Notes

  • For even crispier potatoes, preheat the baking sheet for 5 minutes before adding the potatoes.
