Ingredients
- 1 ½ pounds boneless skinless chicken breasts
- 2 tablespoons olive oil
- 4 cloves garlic, minced
- 1 small onion, diced
- 3 carrots, sliced
- 2 celery stalks, sliced
- 6 cups chicken broth
- 1 cup heavy cream
- 2 cups egg noodles
- 1 teaspoon dried thyme
- 1 teaspoon salt
- ½ teaspoon black pepper
- 2 tablespoons chopped fresh parsley for garnish
Instructions
- Heat olive oil in a large pot over medium heat. Add diced onion, carrots, and celery. Cook for 5 to 6 minutes until softened.
- Stir in garlic and cook for 1 minute until fragrant.
- Add chicken breasts, chicken broth, thyme, salt, and black pepper. Bring to a gentle boil.
- Reduce heat to a simmer and cook for 15 to 18 minutes until the chicken is fully cooked.
- Remove the chicken from the pot and shred it using two forks.
- Return shredded chicken to the pot and add egg noodles. Simmer for 8 to 10 minutes until noodles are tender.
- Stir in heavy cream and cook for another 2 to 3 minutes until heated through.
- Taste and adjust seasoning if needed.
- Ladle into bowls and garnish with chopped parsley before serving.
Notes
- For a thicker soup, let it simmer a few extra minutes after adding the cream to slightly reduce the broth.
