Creamy Garlic Butter Steak Bites Recipe

Description

Tender, juicy steak bites in a rich parmesan cream sauce, served over mashed potatoes.


Ingredients

  • 1 1/2 pounds ribeye steak or New York strip steak, cut into 1 inch cubes
  • 1 tablespoon olive oil
  • 1 1/2 teaspoons smoked paprika
  • 3/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 2 teaspoons Italian seasoning
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • 4 tablespoons unsalted butter
  • 1/2 small shallot, finely minced
  • 6 garlic cloves, minced
  • 1 cup heavy cream
  • 1/3 cup freshly grated parmesan cheese
  • 1/2 tablespoon chopped Italian parsley
  • salt to taste
  • black pepper to taste
  • 6 cups prepared mashed red potatoes
  • chopped parsley for garnish


Instructions

  1. Pat the steak cubes dry with paper towels and place them in a large bowl.
  2. Add the olive oil, smoked paprika, garlic powder, onion powder, Italian seasoning, kosher salt, and black pepper. Toss until evenly coated and let the steak sit at room temperature for 15 minutes.
  3. Heat a large cast iron skillet over high heat until very hot.
  4. Add the steak cubes in a single layer and sear for 2 to 3 minutes per side until a deep golden crust forms. Cook in batches if needed to avoid overcrowding the pan.
  5. Cook the steak to an internal temperature of 145 degrees F for medium doneness.
  6. Transfer the steak bites to a plate and reduce the heat to medium low.
  7. Melt the butter in the skillet, then add the minced shallot and garlic. Cook for 30 seconds until fragrant.
  8. Return the steak bites to the skillet and toss in the garlic butter for 1 minute. Transfer the steak to a bowl, leaving about half of the butter mixture in the skillet.
  9. Pour the heavy cream into the skillet and bring to a gentle simmer for 1 to 2 minutes.
  10. Stir in the parmesan cheese and chopped parsley until the sauce is smooth and slightly thickened. Season with salt and black pepper to taste.
  11. Spoon the mashed potatoes into serving bowls and top with the steak bites. Drizzle the parmesan cream sauce over the top and garnish with chopped parsley.

  • For the best sear, ensure steak cubes are dry before cooking and avoid moving them too early in the skillet.
