Description

A festive side dish with sweet potato, cinnamon apples, and tart cranberries, ideal for holiday meals.


Ingredients

  • 4 medium sweet potatoes
  • 1 tablespoon olive oil
  • 1 medium apple, peeled and diced
  • 1/3 cup dried cranberries
  • 2 tablespoons maple syrup
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon nutmeg
  • 2 tablespoons unsalted butter
  • 1/4 teaspoon salt
  • 2 tablespoons chopped pecans


Instructions

  1. Preheat your oven to 400°F. Line a baking sheet with parchment paper.
  2. Pierce the sweet potatoes with a fork and place them on the baking sheet.
  3. Bake for 45 to 55 minutes until tender.
  4. Let the sweet potatoes cool slightly. Slice them in half lengthwise and scoop the flesh into a large bowl, leaving a thin border inside the skins.
  5. Heat the olive oil in a skillet over medium heat. Add the diced apple and cook for 4 to 5 minutes until softened.
  6. Stir in the dried cranberries, maple syrup, cinnamon, nutmeg, butter, and salt.
  7. Add the sweet potato flesh to the skillet and mash gently until combined.
  8. Spoon the mixture back into the sweet potato skins.
  9. Sprinkle with chopped pecans and return to the oven for 10 to 15 minutes until heated through.
  10. Serve warm.
