Description

Classic Chicken Caesar Salad with Homemade Dressing. This recipe is fresh, flavorful, and uses crisp romaine, juicy chicken, and creamy homemade Caesar dressing.


Ingredients

  • 1 pound boneless skinless chicken breasts
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 4 cups chopped romaine lettuce
  • 1 avocado, sliced
  • 2 boiled eggs, quartered
  • ½ cup cherry tomatoes, halved
  • ¼ cup shredded Parmesan cheese
  • ½ cup homemade croutons (optional)
  • ½ cup plain Greek yogurt
  • 2 tablespoons mayonnaise
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon Dijon mustard
  • 1 garlic clove, minced
  • 2 tablespoons grated Parmesan cheese
  • 1 teaspoon Worcestershire sauce
  • Salt and pepper to taste
  • 12 tablespoons water to thin if needed


Instructions

  1. Preheat grill pan over medium-high heat. Rub chicken with olive oil, garlic powder, salt, and pepper.
  2. Grill chicken for 5–6 minutes per side, or until cooked through and internal temperature reaches 165°F. Let rest for 5 minutes, then slice.
  3. In a small bowl, whisk together Greek yogurt, mayonnaise, lemon juice, Dijon mustard, garlic, Parmesan, Worcestershire sauce, salt, and pepper until smooth. Add water if needed to reach desired consistency.
  4. In a large bowl, toss romaine with half of the dressing until lightly coated.
  5. Top with avocado, eggs, tomatoes, and sliced chicken.
  6. Drizzle remaining dressing over the top and sprinkle with Parmesan and croutons before serving.
