Description

Quick and flavorful chicken broccoli stir fry with a savory homemade garlic sauce, ready in under 30 minutes.

Ingredients

  • 1 pound boneless skinless chicken breast cut into 1 inch cubes
  • 3 cups broccoli florets
  • 2 tablespoons vegetable oil
  • 3 cloves garlic minced
  • 1 teaspoon fresh ginger grated
  • 1/3 cup low sodium soy sauce
  • 1/2 cup chicken broth
  • 1 tablespoon cornstarch
  • 2 tablespoons honey
  • 1 teaspoon sesame oil

Instructions

  1. In a bowl whisk together soy sauce, chicken broth, cornstarch, honey, and sesame oil until smooth. Set aside.
  2. Heat 1 tablespoon oil in a large skillet over medium high heat. Add the chicken in a single layer and cook for 5 to 7 minutes, turning occasionally, until lightly browned and cooked through. Remove and set aside.
  3. Add the remaining oil to the skillet, then add broccoli and cook for 3 to 4 minutes until bright green and slightly tender.
  4. Stir in garlic and ginger and cook for 30 seconds until fragrant.
  5. Return the chicken to the skillet and pour in the sauce.
  6. Stir well and cook for 2 to 3 minutes until the sauce thickens and coats the chicken and broccoli evenly.
  7. Remove from heat and serve hot.
