Ingredients
- 1 pound lean ground beef
- 1 tablespoon olive oil
- 1 small yellow onion diced
- 3 cloves garlic minced
- 4 cups beef broth
- 1 can diced tomatoes drained
- 2 cups elbow macaroni
- 1 teaspoon sea salt
- 1/2 teaspoon black pepper
- 1 teaspoon smoked paprika
- 1 teaspoon Italian seasoning
- 2 cups shredded cheddar cheese
- 1 cup whole milk
- 1/2 cup heavy cream
- 2 tablespoons tomato paste
- 2 tablespoons chopped fresh parsley
Instructions
- Heat olive oil in a large soup pot over medium heat.
- Add diced onion and cook for 4 to 5 minutes until softened.
- Stir in garlic and cook for 30 seconds until fragrant.
- Add ground beef and cook until browned and fully cooked to an internal temperature of 160°F. Drain excess grease if needed.
- Stir in tomato paste, smoked paprika, Italian seasoning, sea salt, and black pepper.
- Pour in beef broth and add drained diced tomatoes. Bring soup to a gentle boil.
- Stir in elbow macaroni and cook for 8 to 10 minutes until tender.
- Reduce heat to low and stir in milk and heavy cream.
- Gradually add shredded cheddar cheese while stirring until melted and smooth.
- Simmer for 2 to 3 minutes until creamy and heated through.
- Garnish with fresh parsley before serving.
