Description

Ingredients

  • 200 grams cheese (cheddar or tasty), sliced
  • 2 tablespoons fresh rosemary, finely chopped
  • 2 tablespoons fresh parsley leaves, finely chopped
  • 1 teaspoon dried oregano
  • ½ teaspoon dried thyme
  • 2 garlic cloves, crushed
  • 3 tablespoons extra virgin olive oil
  • ½ teaspoon cooking salt or kosher salt
  • 2¼ cups plain flour
  • 1 teaspoon baking soda or 3½ teaspoons baking powder
  • ¾ teaspoon cooking salt or kosher salt
  • ½ cup plain yogurt
  • ¾ cup full-fat milk
  • 2 large eggs
  • 50 grams unsalted butter, melted
  • 2 tablespoons olive oil
  • 2 small garlic cloves, crushed


Instructions

  1. Preheat oven to 180°C (350°F). Grease and line a loaf pan.
  2. Combine rosemary, parsley, oregano, thyme, crushed garlic, extra virgin olive oil, and salt for the herb swirl. Mix to a thick consistency.
  3. Whisk together flour, baking soda (or powder), and salt for dry ingredients.
  4. Whisk yogurt, milk, eggs, melted butter, olive oil, and garlic for wet ingredients until smooth.
  5. Make a well in the dry ingredients, add wet ingredients, and mix gently until just combined.
  6. Layer one-third of the batter, herb mixture, and cheese slices in the loaf pan. Repeat two more times.
  7. Bake for 30 minutes, then cover with foil and bake for another 20 minutes, or until a skewer comes out clean.
  8. Cool in the pan for 5 minutes, then transfer to a wire rack to cool for at least 10 minutes before slicing.

Notes

  • Butter may be added to taste after baking, if desired.
