Ingredients
- 200 grams cheese (cheddar or tasty), sliced
- 2 tablespoons fresh rosemary, finely chopped
- 2 tablespoons fresh parsley leaves, finely chopped
- 1 teaspoon dried oregano
- ½ teaspoon dried thyme
- 2 garlic cloves, crushed
- 3 tablespoons extra virgin olive oil
- ½ teaspoon cooking salt or kosher salt
- 2¼ cups plain flour
- 1 teaspoon baking soda or 3½ teaspoons baking powder
- ¾ teaspoon cooking salt or kosher salt
- ½ cup plain yogurt
- ¾ cup full-fat milk
- 2 large eggs
- 50 grams unsalted butter, melted
- 2 tablespoons olive oil
- 2 small garlic cloves, crushed
Instructions
- Preheat oven to 180°C (350°F). Grease and line a loaf pan.
- Combine rosemary, parsley, oregano, thyme, crushed garlic, extra virgin olive oil, and salt for the herb swirl. Mix to a thick consistency.
- Whisk together flour, baking soda (or powder), and salt for dry ingredients.
- Whisk yogurt, milk, eggs, melted butter, olive oil, and garlic for wet ingredients until smooth.
- Make a well in the dry ingredients, add wet ingredients, and mix gently until just combined.
- Layer one-third of the batter, herb mixture, and cheese slices in the loaf pan. Repeat two more times.
- Bake for 30 minutes, then cover with foil and bake for another 20 minutes, or until a skewer comes out clean.
- Cool in the pan for 5 minutes, then transfer to a wire rack to cool for at least 10 minutes before slicing.
Notes
- Butter may be added to taste after baking, if desired.
