Ingredients

  • For the bruschetta dip: 4 cups ripe Roma tomatoes diced
  • 1 cup cherry tomatoes halved
  • 1/3 cup red onion finely diced
  • 3 cloves garlic minced
  • 1/3 cup fresh basil chopped
  • 3 tablespoons extra virgin olive oil
  • 1 tablespoon balsamic vinegar
  • 3/4 teaspoon salt
  • 1/2 teaspoon black pepper
  • For the garlic crostini: 1 baguette sliced into half inch rounds
  • 3 tablespoons olive oil
  • 2 cloves garlic finely minced
  • 1/2 teaspoon salt


Instructions

  1. Preheat your oven to 400 degrees F. Line a baking sheet with parchment paper.
  2. Arrange the baguette slices in a single layer on the baking sheet.
  3. In a small bowl, mix olive oil, minced garlic, and salt. Brush each slice lightly with the mixture.
  4. Bake for 8 to 10 minutes until golden and crisp. Remove from the oven and let cool.
  5. In a large bowl, combine diced Roma tomatoes, cherry tomatoes, red onion, garlic, and basil.
  6. Add olive oil, balsamic vinegar, salt, and black pepper. Toss gently until evenly mixed.
  7. Let the mixture sit for 10 minutes to allow the flavors to blend and juices to release.
  8. Taste and adjust seasoning if needed.
  9. Transfer the bruschetta dip to a serving bowl and drizzle with a little extra olive oil if desired.
  10. Serve immediately with the toasted garlic crostini on the side.
