Ingredients
- For the bruschetta dip: 4 cups ripe Roma tomatoes diced
- 1 cup cherry tomatoes halved
- 1/3 cup red onion finely diced
- 3 cloves garlic minced
- 1/3 cup fresh basil chopped
- 3 tablespoons extra virgin olive oil
- 1 tablespoon balsamic vinegar
- 3/4 teaspoon salt
- 1/2 teaspoon black pepper
- For the garlic crostini: 1 baguette sliced into half inch rounds
- 3 tablespoons olive oil
- 2 cloves garlic finely minced
- 1/2 teaspoon salt
Instructions
- Preheat your oven to 400 degrees F. Line a baking sheet with parchment paper.
- Arrange the baguette slices in a single layer on the baking sheet.
- In a small bowl, mix olive oil, minced garlic, and salt. Brush each slice lightly with the mixture.
- Bake for 8 to 10 minutes until golden and crisp. Remove from the oven and let cool.
- In a large bowl, combine diced Roma tomatoes, cherry tomatoes, red onion, garlic, and basil.
- Add olive oil, balsamic vinegar, salt, and black pepper. Toss gently until evenly mixed.
- Let the mixture sit for 10 minutes to allow the flavors to blend and juices to release.
- Taste and adjust seasoning if needed.
- Transfer the bruschetta dip to a serving bowl and drizzle with a little extra olive oil if desired.
- Serve immediately with the toasted garlic crostini on the side.
