Description
Soft vanilla cupcakes filled with creamy banana pudding and topped with fluffy whipped frosting.
Ingredients
- 1 1/2 cups all purpose flour
- 1 1/2 teaspoons baking powder
- 1/4 teaspoon salt
- 1/2 cup unsalted butter softened
- 3/4 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/2 cup milk
- 1/2 cup mashed ripe banana
- 1 package instant banana pudding mix
- 1 1/2 cups cold milk
- 1 cup heavy whipping cream
- 2 tablespoons powdered sugar
- 12 vanilla wafer cookies
Instructions
- Preheat oven to 350°F. Line a 12 cup muffin pan with cupcake liners.
- Whisk together flour, baking powder, and salt in a medium bowl.
- Beat butter and sugar in a large bowl until light and fluffy.
- Add eggs one at a time, mixing well after each. Stir in vanilla extract.
- Mix in milk and mashed banana.
- Gradually fold dry ingredients into wet ingredients until just combined.
- Divide batter evenly among cupcake liners.
- Bake for 18 to 20 minutes until a toothpick inserted into the center comes out clean.
- Cool cupcakes completely.
- Whisk banana pudding mix and cold milk in a medium bowl until thickened.
- Cut a small hole in the center of each cupcake and spoon in banana pudding filling.
- Beat heavy whipping cream and powdered sugar until stiff peaks form.
- Pipe or spread whipped cream frosting over cupcakes and top each with a vanilla wafer cookie.

- Chill cupcakes for at least 30 minutes before serving.
