Ingredients
- 8 oz lean sirloin steak, sliced thinly (partially frozen recommended)
- 2 cups fresh broccoli florets
- 2 cloves garlic, crushed
- 2 tbsp oil
- For the Marinade:
- 4 tbsp soy sauce
- 2 tsp cornstarch
- 1 tsp baking soda
- For Stir Fry Sauce:
- 4 tbsp soy sauce
- 1 slice ginger, crushed
- 1/8 tsp white pepper
- 1/2 tsp dark sesame oil
- 1 tsp ketchup
- 1/2 cup water
- For Thickener:
- 1/2 cup cold water
- 2 tbsp cornstarch
Instructions
- Prepare the tenderizing marinade by mixing its ingredients. Place the sliced sirloin in a zipper bag, pour the marinade over it, seal, and coat the meat. Refrigerate for 1 hour.
- While the beef marinates, combine the stir fry sauce ingredients in a small dish and set aside. In another small dish, mix the thickener ingredients and set aside.
- Remove the beef from the marinade bag, draining off the excess liquid.
- Heat a large wok or deep skillet over high heat. Add the oil. Once the oil shimmers, add the crushed garlic and the drained beef. Stir-fry, stirring constantly, until the beef is no longer pink.
- Add the broccoli to the wok and stir-fry for about 1 minute, or until it turns bright green.
- Pour in the prepared stir fry sauce and stir to combine. Bring the sauce to a boil.
- Stir the thickener mixture to ensure it’s smooth, then add it to the beef and broccoli. Stir constantly until the sauce bubbles and thickens.
- Cook for 1 more minute. Serve immediately over rice.
Notes
- Using partially frozen steak makes it easier to slice thinly.
- Ensure your wok or skillet is hot before adding the ingredients for a proper stir-fry.
- Adjust cooking time for broccoli to your preferred tenderness.
