Description

A smooth, lightly spiced pie with a custard-like texture and deep apple flavor. This pie offers an easy apple butter alternative to traditional pumpkin pie.

Ingredients

  • 1 unbaked 9 inch pie crust
  • 2 large eggs
  • ½ cup granulated sugar
  • 2 tablespoons cornstarch
  • 1 teaspoon ground cinnamon
  • ½ cup apple butter
  • 2 cups whole milk

Instructions

  1. Preheat your oven to 375°F. Position a rack in the lower third of the oven.
  2. Place the unbaked pie crust into a 9 inch pie dish and crimp the edges. Set the dish aside.
  3. In a medium bowl, whisk the eggs until they are smooth.
  4. Add the granulated sugar, cornstarch, and cinnamon. Whisk until completely combined.
  5. Whisk in the apple butter until the mixture is smooth and evenly blended.
  6. Slowly pour in the whole milk while whisking constantly until the filling is completely smooth.
  7. Pour the filling into the prepared pie crust. Gently stir once with a spoon to distribute the custard evenly.
  8. Bake for 60 to 65 minutes. The edges should be set and the center just slightly jiggly.
  9. Remove from the oven. Cool the pie completely on a wire rack before slicing.

Notes

  • The pie firms up more as it cools, similar to a pumpkin pie.
