Description
Juicy, golden garlic butter chicken bites packed with flavor. A quick high protein dinner for busy weeknights.
Ingredients
- 1 1/2 pounds boneless skinless chicken breasts cut into 1 inch cubes
- 1 tablespoon olive oil
- 1 teaspoon kosher salt
- 1/2 teaspoon black pepper
- 1 teaspoon paprika
- 1/2 teaspoon dried oregano
- 4 tablespoons unsalted butter
- 4 garlic cloves minced
- 1 tablespoon fresh lemon juice
- 1 tablespoon chopped fresh parsley
Instructions
- Pat the chicken cubes dry with paper towels. Season with salt, black pepper, paprika, and dried oregano. Toss to coat evenly.
- Heat olive oil in a large skillet over medium high heat.
- Add the chicken in a single layer without overcrowding. Cook for 3 to 4 minutes without stirring to develop a golden crust.
- Flip and cook for another 3 to 4 minutes until browned and the internal temperature reaches 165 degrees F. Remove chicken to a plate.
- Reduce heat to medium. Add butter to the same skillet and let it melt.
- Stir in minced garlic and cook for 30 to 45 seconds until fragrant but not browned.
- Return the chicken to the skillet and toss in the garlic butter sauce. Cook for 1 to 2 minutes to coat evenly.
- Drizzle with fresh lemon juice and sprinkle with chopped parsley. Serve immediately.
