Description

Juicy, golden garlic butter chicken bites packed with flavor. A quick high protein dinner for busy weeknights.


Ingredients

  • 1 1/2 pounds boneless skinless chicken breasts cut into 1 inch cubes
  • 1 tablespoon olive oil
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon paprika
  • 1/2 teaspoon dried oregano
  • 4 tablespoons unsalted butter
  • 4 garlic cloves minced
  • 1 tablespoon fresh lemon juice
  • 1 tablespoon chopped fresh parsley


Instructions

  1. Pat the chicken cubes dry with paper towels. Season with salt, black pepper, paprika, and dried oregano. Toss to coat evenly.
  2. Heat olive oil in a large skillet over medium high heat.
  3. Add the chicken in a single layer without overcrowding. Cook for 3 to 4 minutes without stirring to develop a golden crust.
  4. Flip and cook for another 3 to 4 minutes until browned and the internal temperature reaches 165 degrees F. Remove chicken to a plate.
  5. Reduce heat to medium. Add butter to the same skillet and let it melt.
  6. Stir in minced garlic and cook for 30 to 45 seconds until fragrant but not browned.
  7. Return the chicken to the skillet and toss in the garlic butter sauce. Cook for 1 to 2 minutes to coat evenly.
  8. Drizzle with fresh lemon juice and sprinkle with chopped parsley. Serve immediately.
