Ingredients

  • 4 large egg whites
  • 1 cup plain Greek yogurt
  • 1 cup all-purpose flour
  • ¾ cup granulated sugar
  • 2 teaspoons baking powder
  • ¼ teaspoon salt
  • 1 teaspoon pure vanilla extract
  • Zest of 1 lemon
  • 1 teaspoon neutral oil for greasing the pan


Instructions

  1. Preheat the oven to 350°F. Lightly oil an 8-inch round cake pan.
  2. Whisk flour, sugar, baking powder, and salt in a large bowl.
  3. In a separate bowl, mix Greek yogurt, vanilla extract, and lemon zest until smooth.
  4. Add the yogurt mixture to the dry ingredients. Stir until just combined.
  5. Whisk egg whites in a clean bowl on high speed until stiff peaks form.
  6. Fold the whipped egg whites into the batter in three parts. Keep the air in the batter.
  7. Pour the batter into the prepared pan. Spread it evenly.
