Ingredients
- For the raspberry layer: 1 and 1/2 cups fresh raspberries, 2 tablespoons granulated sugar, 1 tablespoon lemon juice
- For the white chocolate mousse: 1 cup white chocolate chips, 1 and 1/2 cups heavy cream cold divided, 4 ounces cream cheese softened, 1/4 cup powdered sugar
- For topping: 1/2 cup fresh raspberries, 2 tablespoons white chocolate shavings
Instructions
- In a small saucepan over medium heat, combine raspberries, granulated sugar, and lemon juice. Cook for 5 to 7 minutes until the berries break down and the mixture thickens slightly.
- Strain the raspberry mixture through a fine mesh sieve to remove seeds, then let it cool completely.
- Place white chocolate chips in a heatproof bowl. Heat 1/2 cup of the heavy cream until just steaming, then pour over the chocolate. Let sit for 2 minutes and stir until smooth. Cool to room temperature.
- In a large bowl, beat the cream cheese and powdered sugar until smooth and creamy.
- Add the cooled white chocolate mixture to the cream cheese and mix until fully combined.
- In a separate bowl, whip the remaining 1 cup heavy cream to soft peaks.
- Gently fold the whipped cream into the white chocolate mixture until light and airy.
- Spoon a layer of raspberry sauce into the bottom of serving cups, then add a layer of mousse. Repeat layers as desired, finishing with mousse on top.
- Refrigerate for at least 2 hours until set.
- Garnish with fresh raspberries and white chocolate shavings before serving.

- Keep mousse cups chilled until ready to serve.
