Description

Creamy, light, and bursting with berry flavor. A simple no-bake dessert perfect for any occasion.


Ingredients

  • For the raspberry layer: 1 and 1/2 cups fresh raspberries, 2 tablespoons granulated sugar, 1 tablespoon lemon juice
  • For the white chocolate mousse: 1 cup white chocolate chips, 1 and 1/2 cups heavy cream cold divided, 4 ounces cream cheese softened, 1/4 cup powdered sugar
  • For topping: 1/2 cup fresh raspberries, 2 tablespoons white chocolate shavings


Instructions

  1. In a small saucepan over medium heat, combine raspberries, granulated sugar, and lemon juice. Cook for 5 to 7 minutes until the berries break down and the mixture thickens slightly.
  2. Strain the raspberry mixture through a fine mesh sieve to remove seeds, then let it cool completely.
  3. Place white chocolate chips in a heatproof bowl. Heat 1/2 cup of the heavy cream until just steaming, then pour over the chocolate. Let sit for 2 minutes and stir until smooth. Cool to room temperature.
  4. In a large bowl, beat the cream cheese and powdered sugar until smooth and creamy.
  5. Add the cooled white chocolate mixture to the cream cheese and mix until fully combined.
  6. In a separate bowl, whip the remaining 1 cup heavy cream to soft peaks.
  7. Gently fold the whipped cream into the white chocolate mixture until light and airy.
  8. Spoon a layer of raspberry sauce into the bottom of serving cups, then add a layer of mousse. Repeat layers as desired, finishing with mousse on top.
  9. Refrigerate for at least 2 hours until set.
  10. Garnish with fresh raspberries and white chocolate shavings before serving.
