Ingredients
- 2 and 1/2 cups all purpose flour
- 2 and 1/2 teaspoons baking powder
- 1/2 teaspoon salt
- 1 cup unsalted butter softened
- 1 and 3/4 cups granulated sugar
- 4 large eggs
- 1 cup whole milk
- 1 teaspoon vanilla flavoring
- 6 ounces white chocolate melted and slightly cooled
- 1 cup fresh raspberries
- 1 and 1/2 cups fresh raspberries
- 1/4 cup granulated sugar
- 1 tablespoon cornstarch
- 2 tablespoons water
- 8 ounces cream cheese softened
- 1/2 cup unsalted butter softened
- 3 cups powdered sugar
- 1 tablespoon fresh lemon juice
- 1 teaspoon vanilla flavoring
Instructions
- Preheat oven to 350 degrees F. Grease and line two 9-inch round cake pans.
- In a bowl, whisk together flour, baking powder, and salt.
- In a large bowl, beat butter and sugar until light and fluffy. Add eggs one at a time, mixing well after each.
- Stir in melted white chocolate and vanilla flavoring until smooth.
- Alternate adding the flour mixture and milk, beginning and ending with flour, mixing until just combined.
- Gently fold in raspberries. Divide batter evenly between pans.
- Bake for 25 to 30 minutes until a toothpick inserted in the center comes out clean. Cool completely.
- In a saucepan over medium heat, combine raspberries, sugar, cornstarch, and water. Cook for 5 to 7 minutes, stirring, until thickened. Cool fully.
- In a mixing bowl, beat cream cheese and butter until smooth. Gradually add powdered sugar, then mix in lemon juice and vanilla flavoring until creamy.
- Place one cake layer on a serving plate, spread raspberry filling evenly, then top with the second layer. Frost the top and sides with cream cheese frosting.
- Chill for 20 minutes before slicing for clean layers.
