Description
Creamy whipped ricotta dip topped with warm spicy honey and herbs. This is a quick sweet and savory appetizer ideal for entertaining.
Ingredients
- 2 cups whole milk ricotta cheese drained if watery
- 1 tablespoon extra virgin olive oil
- 1 tablespoon fresh lemon juice
- 1 half teaspoon lemon zest
- 1 quarter teaspoon kosher salt
- 1 quarter teaspoon black pepper
- 1 quarter cup honey
- 1 half teaspoon crushed red pepper flakes
- 1 teaspoon hot sauce
- 2 tablespoons chopped toasted walnuts
- 1 teaspoon finely chopped fresh rosemary
Instructions
- If the ricotta seems watery, place it in a fine mesh strainer over a bowl and let it drain for 20 to 30 minutes.
- Add the ricotta, olive oil, lemon juice, lemon zest, salt, and black pepper to a food processor. Blend for 1 to 2 minutes until completely smooth and fluffy.
- Spoon the whipped ricotta into a shallow serving bowl and use the back of a spoon to create gentle swirls on top.
- In a small saucepan over low heat, warm the honey for 1 to 2 minutes until slightly loosened. Remove from heat and stir in the crushed red pepper flakes and hot sauce. Let sit for 2 minutes to infuse.
- Drizzle the warm spicy honey over the ricotta.
- Sprinkle the toasted walnuts and chopped rosemary over the top.
- Serve immediately with sliced baguette, crackers, or fresh vegetables.
