Description
Creamy whipped feta topped with jammy roasted tomatoes and garlic. This simple appetizer is ready fast and pleases a crowd.
Ingredients
- 2 cups cherry tomatoes
- 2 garlic cloves thinly sliced
- 3 tablespoons olive oil
- 1 teaspoon balsamic vinegar
- 2 sprigs fresh thyme
- 1/2 teaspoon kosher salt
- 1/4 teaspoon black pepper
- 7 ounces feta cheese crumbled
- 1/4 cup full-fat cream cheese
- 2 tablespoons olive oil
- 1 teaspoon lemon zest
- 1 teaspoon honey
- 2 tablespoons fresh basil leaves
- Toasted rustic bread or flatbread
Instructions
- Preheat the oven to 350°F.
- Add cherry tomatoes, sliced garlic, thyme, olive oil, balsamic vinegar, salt, and pepper to a small baking dish and toss gently.
- Roast for 30 minutes until tomatoes are blistered, softened, and releasing their juices. Remove thyme stems and cool slightly.
- Add feta, cream cheese, olive oil, and lemon zest to a small food processor.
- Blend for 3 to 4 minutes, scraping down sides as needed, until smooth and creamy.
- Spread whipped feta onto a shallow serving plate using a spoon to create swirls.
- Spoon roasted tomatoes and garlic over the feta, including some of the olive oil from the pan.
- Drizzle lightly with honey and scatter basil over the top.
- Serve with toasted bread or flatbread.
Notes
- This dish can be assembled just before serving or made several hours ahead and refrigerated.
