Ingredients
- 1 pint cherry tomatoes
- 3 tablespoons extra virgin olive oil, plus more for drizzling and toasting
- 1 tablespoon lemon juice
- 2 cloves garlic, minced
- 1 teaspoon fresh thyme leaves
- Salt and freshly ground black pepper, to taste
- 6 ounces feta cheese, crumbled
- 2 ounces cream cheese, softened
- 1 teaspoon honey
- 1 baguette, sliced into 1/2-inch thick pieces
Instructions
- Preheat your oven to 400°F (200°C).
- In a baking dish, whisk together 3 tablespoons of olive oil, lemon juice, minced garlic, thyme, salt, and pepper.
- Add the cherry tomatoes to the dish and toss to coat them evenly with the seasoned oil.
- Roast the tomatoes for 15-20 minutes, or until they just begin to wilt and soften.
- While the tomatoes are roasting, combine the crumbled feta, softened cream cheese, honey, and 1 tablespoon of extra virgin olive oil in a food processor.
- Blend until the mixture is smooth and creamy.
- Brush the baguette slices lightly with olive oil.
- Heat a skillet or grill pan over medium-high heat. Toast the baguette slices on both sides until golden brown and crisp.
- Spread the whipped feta mixture onto a serving dish, creating a slight well in the center.
- Once the tomatoes have cooled slightly, carefully spoon them into the well on top of the whipped feta.
- Drizzle any excess juices from the roasting dish over the tomatoes and feta.
- Serve immediately with the toasted baguette slices.
Notes
- You can substitute baby plum tomatoes for cherry tomatoes if preferred.
- Adjust the amount of honey to your sweetness preference.
- For a spicier kick, add a pinch of red pepper flakes to the tomatoes before roasting.
