Ingredients
- 2 lbs fresh strawberries
- 2 tsp honey
- Approx. 8 oz feta cheese (around 220 grams)
- 1/2 cup plain greek yogurt
- 2 Tbsp olive oil (plus more for drizzling/serving)
- Black pepper, to taste
- Crusty bread (like sourdough or baguette) for serving
- Fresh basil, chopped, for garnish
Instructions
- Preheat your oven to 350F. Line a large baking sheet with parchment paper.
- Wash the strawberries and remove the stems. Slice the berries in half or quarters. Spread them on the lined baking sheet.
- Whisk the honey with a splash of water to thin it. Drizzle this mixture over the strawberries and toss to coat. Spread the fruit in a single layer.
- Roast the strawberries for 30–35 minutes until they soften and release juices.
- While the berries roast, make the whipped feta. Add the feta cheese, greek yogurt, olive oil, and pepper to a food processor.
- Blend the feta mixture for a few minutes until it is completely smooth. Scrape down the sides with a spatula as needed. Transfer the feta dip to the fridge and chill for 30–60 minutes.
- Remove the roasted strawberries from the oven and let them cool for 5–10 minutes. Transfer the berries and all their juices to a container and chill them separately in the fridge.
- When ready to serve, transfer the chilled whipped feta to a large bowl. Top with the cooled roasted strawberries.
- Serve immediately with toasted crusty bread for dipping. Garnish with fresh chopped basil, an extra drizzle of olive oil, and black pepper.
Notes
- If fresh strawberries are out of season (November through January), substitute with roasted apples or pears for a seasonal variation.
- You can prepare the feta and the fruit topping ahead of time; keep them refrigerated separately until serving.
- Serve this dip chilled, or use it as a spread on crostini or open-faced toast.
- Store any leftovers in airtight containers in the refrigerator for several days.
