Ingredients
- 4 cups watermelon, cut into 1 inch cubes
- 1 cup cucumber, sliced
- ¾ cup feta cheese, crumbled
- ¼ cup fresh mint leaves, chopped
- 2 tablespoons olive oil
- 2 tablespoons fresh lime juice
- 1 teaspoon honey
- ¼ teaspoon salt
- ¼ teaspoon black pepper
Instructions
- In a large bowl, combine watermelon cubes, sliced cucumber, crumbled feta cheese, and chopped mint.
- In a small bowl, whisk olive oil, lime juice, honey, salt, and black pepper until well combined.
- Pour the dressing over the salad and gently toss to coat evenly.
- Chill for 10 to 15 minutes to allow flavors to meld.
- Toss lightly again before serving and adjust seasoning if needed.
- Serve cold for the best flavor and texture.
