Description

Ingredients

  • 4 cups watermelon, cut into 1 inch cubes
  • 1 cup cucumber, sliced
  • ¾ cup feta cheese, crumbled
  • ¼ cup fresh mint leaves, chopped
  • 2 tablespoons olive oil
  • 2 tablespoons fresh lime juice
  • 1 teaspoon honey
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper


Instructions

  1. In a large bowl, combine watermelon cubes, sliced cucumber, crumbled feta cheese, and chopped mint.
  2. In a small bowl, whisk olive oil, lime juice, honey, salt, and black pepper until well combined.
  3. Pour the dressing over the salad and gently toss to coat evenly.
