Description
A crisp and refreshing summer salad with watermelon, feta, and mint in a light lime dressing.
Ingredients
- 4 cups seedless watermelon, cubed
- 1 cup cucumber, diced
- 3/4 cup feta cheese, crumbled
- 1/4 cup fresh mint leaves, chopped
- 2 tablespoons fresh lime juice
- 1 tablespoon olive oil
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- Combine watermelon, cucumber, feta cheese, and mint in a large bowl.
- Whisk together lime juice, olive oil, salt, and black pepper in a small bowl.
- Pour the dressing over the salad and gently toss to combine.
- Chill for 15 to 20 minutes before serving.
- Serve cold.
