Ingredients
- For the Honey Lime Dressing: 2 tablespoons honey
- 2 tablespoons fresh lime juice
- 1 tablespoon olive oil
- 1/8 teaspoon kosher salt
- For the Salad: 6 cups seedless watermelon, cubed
- 2 cups English cucumber, cubed
- 15 fresh mint leaves, chopped
- 15 fresh basil leaves, chopped
- 1/2 cup crumbled feta cheese
Instructions
- Whisk together honey, lime juice, olive oil, and salt in a small bowl until smooth.
- Add watermelon and cucumber cubes to a large serving bowl.
- Sprinkle in chopped mint and basil and gently toss the salad.
- Drizzle the honey lime dressing evenly over the salad.
- Toss gently again to coat ingredients without breaking the watermelon.
- Sprinkle crumbled feta cheese over the top just before serving.
- Serve immediately.
