Description

A fresh, sweet, and tangy watermelon feta cucumber salad with mint, basil, and a honey lime dressing, perfect for summer meals.


Ingredients

  • For the Honey Lime Dressing: 2 tablespoons honey
  • 2 tablespoons fresh lime juice
  • 1 tablespoon olive oil
  • 1/8 teaspoon kosher salt
  • For the Salad: 6 cups seedless watermelon, cubed
  • 2 cups English cucumber, cubed
  • 15 fresh mint leaves, chopped
  • 15 fresh basil leaves, chopped
  • 1/2 cup crumbled feta cheese


Instructions

  1. Whisk together honey, lime juice, olive oil, and salt in a small bowl until smooth.
  2. Add watermelon and cucumber cubes to a large serving bowl.
  3. Sprinkle in chopped mint and basil and gently toss the salad.
  4. Drizzle the honey lime dressing evenly over the salad.
  5. Toss gently again to coat ingredients without breaking the watermelon.
  6. Sprinkle crumbled feta cheese over the top just before serving.
  7. Serve immediately.
