Description

A simple one-pot tomato basil soup recipe perfect for beginners. It’s creamy, flavorful, and quick to make.


Ingredients

  • 1 tbsp olive oil
  • 1 small onion, chopped
  • 2-3 cloves garlic, minced
  • 2 (28-ounce) cans diced or crushed tomatoes, undrained
  • 4 cups vegetable broth
  • 1 tsp dried oregano
  • 2 tbsp brown sugar (optional)
  • Salt and freshly ground black pepper to taste
  • 1/2 cup heavy cream or half-and-half
  • 1/4 cup chopped fresh basil
  • Grated Parmesan cheese, for garnish (optional)


Instructions

  1. Heat olive oil in a large pot over medium heat. Add onion and cook until softened, about 5-7 minutes.
  2. Stir in garlic and cook for 30 seconds until fragrant.
  3. Add tomatoes, vegetable broth, oregano, brown sugar (if using), salt, and pepper.
  4. Bring to a boil, then reduce heat to low. Simmer uncovered for 15-20 minutes.
  5. Purée soup with an immersion blender until smooth. Alternatively, use a regular blender in batches and return to the pot.
  6. Stir in heavy cream and basil. Heat gently for a few minutes; do not boil.
  7. Taste and adjust seasoning.
  8. Serve warm, garnished with basil or Parmesan if desired.

Notes

  • Brown sugar can help balance the acidity of the tomatoes.
  • Do not boil the soup after adding the cream.
