Description
A simple one-pot tomato basil soup recipe perfect for beginners. It’s creamy, flavorful, and quick to make.
Ingredients
- 1 tbsp olive oil
- 1 small onion, chopped
- 2-3 cloves garlic, minced
- 2 (28-ounce) cans diced or crushed tomatoes, undrained
- 4 cups vegetable broth
- 1 tsp dried oregano
- 2 tbsp brown sugar (optional)
- Salt and freshly ground black pepper to taste
- 1/2 cup heavy cream or half-and-half
- 1/4 cup chopped fresh basil
- Grated Parmesan cheese, for garnish (optional)
Instructions
- Heat olive oil in a large pot over medium heat. Add onion and cook until softened, about 5-7 minutes.
- Stir in garlic and cook for 30 seconds until fragrant.
- Add tomatoes, vegetable broth, oregano, brown sugar (if using), salt, and pepper.
- Bring to a boil, then reduce heat to low. Simmer uncovered for 15-20 minutes.
- Purée soup with an immersion blender until smooth. Alternatively, use a regular blender in batches and return to the pot.
- Stir in heavy cream and basil. Heat gently for a few minutes; do not boil.
- Taste and adjust seasoning.
- Serve warm, garnished with basil or Parmesan if desired.
Notes
- Brown sugar can help balance the acidity of the tomatoes.
- Do not boil the soup after adding the cream.
