Ingredients
- 1 pound ground turkey
- 1 tablespoon olive oil
- 2 medium zucchini diced
- 1/2 cup onion diced
- 2 cloves garlic minced
- 1 teaspoon paprika
- 1/2 teaspoon dried oregano
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 cup diced tomatoes
- 1/4 cup chicken broth
- 1/4 cup grated parmesan cheese
- 2 tablespoons chopped fresh parsley
Instructions
- Heat olive oil in a large skillet over medium heat.
- Add ground turkey and cook for 5 to 6 minutes, breaking it apart, until browned.
- Add onion and cook for 3 to 4 minutes until softened. Stir in garlic and cook for 1 minute.
- Add zucchini, paprika, oregano, salt, and black pepper. Cook for 5 to 6 minutes until zucchini is tender.
- Stir in diced tomatoes and chicken broth. Simmer for 3 to 4 minutes until slightly thickened.
- Sprinkle parmesan cheese over the skillet and stir until melted.
- Garnish with fresh parsley and serve warm.
