Description

A quick, flavorful one-pan meal made with lean ground turkey, zucchini, and simple seasonings. It is light yet satisfying and perfect for an easy weeknight dinner or meal prep.


Ingredients

  • 1 pound ground turkey
  • 1 tablespoon olive oil
  • 2 medium zucchini diced
  • 1/2 cup onion diced
  • 2 cloves garlic minced
  • 1 teaspoon paprika
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup diced tomatoes
  • 1/4 cup chicken broth
  • 1/4 cup grated parmesan cheese
  • 2 tablespoons chopped fresh parsley


Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add ground turkey and cook for 5 to 6 minutes, breaking it apart, until browned.
  3. Add onion and cook for 3 to 4 minutes until softened. Stir in garlic and cook for 1 minute.
  4. Add zucchini, paprika, oregano, salt, and black pepper. Cook for 5 to 6 minutes until zucchini is tender.
  5. Stir in diced tomatoes and chicken broth. Simmer for 3 to 4 minutes until slightly thickened.
  6. Sprinkle parmesan cheese over the skillet and stir until melted.
  7. Garnish with fresh parsley and serve warm.
