Description

This ground turkey zucchini skillet offers lean protein and fresh vegetables in a single pan for a fast, healthy dinner ready in 30 minutes.


Ingredients

  • 1 tablespoon olive oil
  • 1 pound ground turkey
  • 1 medium onion, diced
  • 2 medium zucchini, diced
  • 1 bell pepper, diced
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons tomato paste
  • 1/4 cup water
  • 2 cups fresh spinach
  • Chopped parsley for garnish


Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add ground turkey and cook, breaking apart, until browned and cooked to 165°F, about 7 minutes.
  3. Remove turkey from skillet and set aside.
  4. Add onion, zucchini, and bell pepper to skillet. Sauté until softened, about 6 minutes.
  5. Stir in garlic, oregano, paprika, salt, and black pepper. Cook 1 minute until fragrant.
  6. Return turkey to skillet.
  7. Stir in tomato paste and water. Simmer 3 minutes to thicken.
  8. Add spinach and cook 2 minutes until wilted.
  9. Taste and adjust seasoning if needed.
  10. Garnish with parsley and serve hot.
