Description
This ground turkey zucchini skillet offers lean protein and fresh vegetables in a single pan for a fast, healthy dinner ready in 30 minutes.
Ingredients
- 1 tablespoon olive oil
- 1 pound ground turkey
- 1 medium onion, diced
- 2 medium zucchini, diced
- 1 bell pepper, diced
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- 1 teaspoon paprika
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 2 tablespoons tomato paste
- 1/4 cup water
- 2 cups fresh spinach
- Chopped parsley for garnish
Instructions
- Heat olive oil in a large skillet over medium heat.
- Add ground turkey and cook, breaking apart, until browned and cooked to 165°F, about 7 minutes.
- Remove turkey from skillet and set aside.
- Add onion, zucchini, and bell pepper to skillet. Sauté until softened, about 6 minutes.
- Stir in garlic, oregano, paprika, salt, and black pepper. Cook 1 minute until fragrant.
- Return turkey to skillet.
- Stir in tomato paste and water. Simmer 3 minutes to thicken.
- Add spinach and cook 2 minutes until wilted.
- Taste and adjust seasoning if needed.
- Garnish with parsley and serve hot.
