Description

Crispy turkey BLT wraps with juicy tomatoes and a creamy herb sauce. This recipe makes an easy lunch or light dinner ready in 30 minutes.


Ingredients

  • 12 slices turkey bacon
  • 3 large ripe tomatoes thinly sliced
  • 2 tablespoons olive oil
  • 1 tablespoon red wine vinegar
  • 1 quarter teaspoon kosher salt
  • 1 eighth teaspoon black pepper
  • 1 quarter cup mayonnaise
  • 1 tablespoon finely minced fresh parsley
  • 1 teaspoon Dijon mustard
  • 1 teaspoon lemon juice
  • 1 pinch black pepper
  • 4 large flour tortillas
  • 1 and one half cups shredded romaine lettuce


Instructions

  1. Cook the turkey bacon in a large skillet over medium heat for 8 to 10 minutes, turning occasionally, until browned and crisp. Transfer to a paper towel lined plate to drain. Cook poultry products to an internal temperature of 165 degrees Fahrenheit.
  2. In a shallow bowl, gently toss the sliced tomatoes with olive oil, red wine vinegar, salt, and black pepper. Let sit for 10 minutes to lightly marinate.
  3. In a small bowl, stir together mayonnaise, parsley, Dijon mustard, lemon juice, and black pepper until smooth.
  4. Warm the tortillas in the microwave for 10 seconds to make them more pliable. Lay them flat on a clean surface.
  5. Spread about 1 tablespoon of the creamy herb sauce evenly over each tortilla.
  6. Divide the shredded lettuce evenly among the tortillas. Top each with three slices of turkey bacon and several slices of marinated tomato, allowing excess liquid to remain in the bowl.
  7. Fold in the sides of each tortilla and roll tightly into a wrap. Let rest for 2 minutes seam side down before slicing in half. Serve immediately.

  • Allow excess tomato marinade to drip off before assembling to keep the wraps from becoming soggy.
