  • 1 cup coconut oil, melted

Instructions

  1. Preheat your oven to 350°F (175°C). Spray two 4 ½” x 8 ½” loaf pans with cooking spray.
  2. In a large bowl, beat the melted coconut oil, eggs, sugar, and vanilla extract until well combined.
  3. In a separate bowl, whisk together the flour, cinnamon, baking soda, cream of tartar (or baking powder), and salt.
  4. Gradually add the dry ingredients to the wet ingredients and mix until fully combined. The batter will be thick.
  5. Stir in the grated zucchini until well incorporated.
  6. In a small bowl, mix the topping ingredients: sugar, cinnamon, and cream of tartar (if using).
  7. Fill each loaf pan halfway with batter. Sprinkle 2 tbsp of the topping mixture on each.
  8. Divide the remaining batter between the two pans. Sprinkle the remaining topping over the loaves.
  9. Bake for 45-50 minutes or until a knife inserted into the center comes out clean.
  10. Let the bread cool completely on a wire rack before slicing and serving.
