- 1 cup coconut oil, melted
- 3 eggs
- 1 ¼ cups granulated white sugar
- 1 teaspoon vanilla extract

- 2 cups grated zucchini (don’t dry it out first)
- For the topping:
- ½ cup granulated white sugar
- 1 teaspoon cinnamon
- 1/4 teaspoon cream of tartar (optional)
Instructions
- Preheat your oven to 350°F (175°C). Spray two 4 ½” x 8 ½” loaf pans with cooking spray.
- In a large bowl, beat the melted coconut oil, eggs, sugar, and vanilla extract until well combined.
- In a separate bowl, whisk together the flour, cinnamon, baking soda, cream of tartar (or baking powder), and salt.
- Gradually add the dry ingredients to the wet ingredients and mix until fully combined. The batter will be thick.
- Stir in the grated zucchini until well incorporated.
- In a small bowl, mix the topping ingredients: sugar, cinnamon, and cream of tartar (if using).
- Fill each loaf pan halfway with batter. Sprinkle 2 tbsp of the topping mixture on each.
- Divide the remaining batter between the two pans. Sprinkle the remaining topping over the loaves.
- Bake for 45-50 minutes or until a knife inserted into the center comes out clean.
- Let the bread cool completely on a wire rack before slicing and serving.
