Ingredients
- 4 large russet potatoes (peeled and diced)
- 1 large onion (chopped)
- 2 cloves of garlic (minced)
- 4 tbsp unsalted butter
- 3 tbsp all-purpose flour
- 4 cups chicken or vegetable broth
- 1 cup whole milk or heavy cream
- Salt and black pepper to taste
- Optional: fresh thyme or rosemary
Instructions
- Melt butter in a large pot over medium heat. Add onion and cook until translucent, about 5 minutes. Add garlic and cook for 1 minute more.
- Sprinkle flour over onions and garlic, stirring constantly for 2 minutes to create a roux.
- Gradually whisk in broth, scraping the bottom of the pot. Add diced potatoes, salt, and pepper. Bring to a boil, then reduce heat and simmer for 15-20 minutes, or until potatoes are tender.
- Use an immersion blender to blend the soup to your desired consistency.
- Stir in milk or cream and cook over low heat for 5 minutes. Adjust seasoning.
- Ladle into bowls and garnish as desired.
