Ingredients

  • 4 large russet potatoes (peeled and diced)
  • 1 large onion (chopped)
  • 2 cloves of garlic (minced)
  • 4 tbsp unsalted butter
  • 3 tbsp all-purpose flour
  • 4 cups chicken or vegetable broth
  • 1 cup whole milk or heavy cream
  • Salt and black pepper to taste
  • Optional: fresh thyme or rosemary


Instructions

  1. Melt butter in a large pot over medium heat. Add onion and cook until translucent, about 5 minutes. Add garlic and cook for 1 minute more.
  2. Sprinkle flour over onions and garlic, stirring constantly for 2 minutes to create a roux.
  3. Gradually whisk in broth, scraping the bottom of the pot. Add diced potatoes, salt, and pepper. Bring to a boil, then reduce heat and simmer for 15-20 minutes, or until potatoes are tender.
  4. Use an immersion blender to blend the soup to your desired consistency.
