Ingredients

  • 1 pound ground beef or ground turkey
  • 1 medium onion, chopped
  • 1 can (15 ounces) black beans, drained and rinsed
  • 1 can (15 ounces) diced tomatoes with green chilies
  • 1 tablespoon chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon garlic powder
  • 1 teaspoon sea salt
  • 1/2 teaspoon black pepper
  • 1 cup yellow cornmeal
  • 1 cup milk
  • 1 large egg
  • 1 cup shredded cheddar cheese
  • 1/4 cup sliced black olives (optional)
  • 2 tablespoons chopped cilantro for garnish

Instructions

  1. Preheat oven to 350°F. Grease a 9×13-inch baking dish.
  2. In a large skillet over medium heat, cook ground beef and onion until the beef is browned and the onion is soft, about 6 minutes. Drain excess fat.
  3. Stir in black beans, diced tomatoes, chili powder, cumin, garlic powder, salt, and pepper. Simmer for 5 minutes to blend flavors.
  4. In a separate bowl, whisk together cornmeal, milk, and egg until smooth.
  5. Spread half the cornmeal mixture in the baking dish.
  6. Layer the beef mixture evenly over the top, then pour the remaining cornmeal mixture over it.
  7. Sprinkle with shredded cheese and black olives.
  8. Bake for 30 to 35 minutes, until the top is golden and set.
  9. Cool for 10 minutes before slicing. Garnish with chopped cilantro before serving.
