Ingredients

  • 2 tablespoons olive oil
  • 1 small yellow onion or white onion (diced)
  • 2 cloves garlic (minced)
  • pounds ground chicken
  • 1 tablespoon brown sugar
  • 2 tablespoons chili powder
  • 1 teaspoon onion powder
  • ½ teaspoon garlic powder
  • ½ teaspoon ground cumin
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 cup chicken broth
  • 1 (15-ounce) can crushed tomatoes
  • 1 (15-ounce) can tomato sauce
  • 1 tablespoon tomato paste
  • 1 (15-ounce) can black beans (drained and rinsed)
  • 1 (15-ounce) can red kidney beans (drained and rinsed)
  • ¼ teaspoon cayenne pepper (optional for spicy)
  • Optional Toppings: shredded cheddar cheese, tortilla chips, finely chopped red onions, thinly chopped green onions, sour cream


Instructions

  1. Heat a medium dutch oven or soup pot over medium heat. Add the olive oil and diced onion; sauté for 3–4 minutes until the onion becomes translucent. Then add the garlic and sauté for an additional minute.
  2. Add the ground chicken to the pot, breaking it apart with a wooden spoon. Continue cooking until fully browned, about 5 minutes.
  3. Stir in the brown sugar, chili powder, onion powder, garlic powder, cumin, salt, and black pepper. Cook for another 30 seconds, stirring to distribute the seasonings evenly.
  4. Pour in the chicken broth, crushed tomatoes, tomato sauce, tomato paste, black beans, and kidney beans. Stir everything together.
  5. Bring the mixture to a gentle simmer, then simmer uncovered for 20–25 minutes, stirring occasionally.
  6. Serve hot, with your choice of toppings such as cheddar cheese, tortilla chips, red onion, green onion, or sour cream.
