Description
Savory and slightly sweet teriyaki beef bowls with rice and vegetables for a quick meal.
Ingredients
- 1 pound beef sirloin thinly sliced
- 1 tablespoon olive oil
- 1 cup broccoli florets
- 1 cup carrots sliced
- 1/2 cup bell pepper sliced
- 1/4 cup low sodium soy sauce
- 2 tablespoons brown sugar
- 1 tablespoon honey
- 1 teaspoon grated fresh ginger
- 2 cloves garlic minced
- 1 tablespoon cornstarch
- 2 tablespoons water
- 2 cups cooked white rice
- 2 tablespoons sliced green onions
Instructions
- In a small bowl whisk together soy sauce, brown sugar, honey, ginger, and garlic.
- In another small bowl mix cornstarch and water, then add to the sauce mixture.
- Heat olive oil in a large skillet over medium high heat.
- Add beef and cook for 3 to 4 minutes until browned. Remove and set aside.
- In the same skillet add broccoli, carrots, and bell pepper. Cook for 4 to 5 minutes until tender crisp.
- Return beef to the skillet and pour in the teriyaki sauce.
- Cook for 2 to 3 minutes until sauce thickens and coats the beef and vegetables.
- Serve over cooked rice and garnish with green onions.
Notes
- Cook beef to an internal temperature of 145°F with a 3 minute rest for safe consumption.
- Slice beef thinly against the grain for tenderness.
