Description

A quick and flavorful one-pan meal featuring sausage and vegetables, perfect for busy weeknights.


Ingredients

  • 1 lb turkey or beef sausage, sliced into rounds
  • 1 large green bell pepper, sliced
  • 1 medium yellow bell pepper, sliced
  • 1 large yellow onion, sliced
  • 1 cup cherry tomatoes, halved
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon black pepper
  • ½ teaspoon salt
  • 1 teaspoon Cajun seasoning (optional)
  • Hot cooked white rice, for serving


Instructions

  1. Heat the olive oil in a large skillet over medium heat. Add the sausage slices and cook for 4–5 minutes per side until nicely browned. Remove the sausage from the pan and set aside.
  2. In the same skillet, add the sliced onions and bell peppers. Sauté for about 5–6 minutes until they start to soften. Add the cherry tomatoes and cook for another 2–3 minutes.
  3. Return the browned sausage to the skillet with the veggies. Sprinkle in the garlic powder, black pepper, salt, and Cajun seasoning. Stir everything together until well combined.
  4. Let it simmer for a couple more minutes to let the flavors meld. Serve over hot rice.

Notes

  • Cajun seasoning is optional but adds a nice kick.
  • Serve with hot cooked white rice.
