Description
Easy taco lasagna with ground beef, cheese, beans, and tortillas. A comforting, family-friendly dinner ready in about an hour.
Ingredients
- 1 lb ground beef (80% lean)
- 1 tablespoon olive oil
- 1 packet taco seasoning blend
- 3/4 cup water
- 1 1/2 cups salsa
- 4 large flour tortillas
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (15 oz) corn kernels, drained
- 1 1/2 cups shredded cheddar cheese
- 1 1/2 cups shredded Monterey Jack cheese
- 1 cup sour cream
- 1/4 cup chopped fresh cilantro
- 2 tablespoons sliced green onions
Instructions
- Preheat oven to 350°F.
- Heat olive oil in a large skillet over medium heat. Add ground beef and cook for about 6–8 minutes, breaking it up until browned. Drain excess fat.
- Stir in taco seasoning and water. Simmer for 5 minutes until slightly thickened.
- Add salsa and stir to combine. Remove from heat.
- In a bowl, mix black beans and corn together.
- Spread a thin layer of the beef mixture in a 9×13-inch baking dish.
- Lay a tortilla over the beef. Spread a layer of bean and corn mixture, then sprinkle a mix of cheddar and Monterey Jack cheese.
- Repeat layers until all ingredients are used, ending with cheese on top.
- Cover the dish with foil and bake for 30 minutes.
- Remove foil and bake for another 10–12 minutes, until cheese is melted and bubbling.
- Let rest for 5 minutes before slicing.
- Top with sour cream, cilantro, and green onions before serving.
Notes
- Cook ground beef to an internal temperature of 160°F before layering.
