Ingredients
- 1 cup ripe mango flesh diced
- 1/4 cup fresh lime juice
- 2 tablespoons honey
- 1/4 teaspoon ground cumin
- 1/4 teaspoon smoked paprika
- 1/4 teaspoon fine sea salt
- 1/8 teaspoon cayenne pepper
- 1/3 cup olive oil
Instructions
- Add mango, lime juice, honey, cumin, smoked paprika, salt, and cayenne to a blender.
- Blend until completely smooth, scraping down the sides as needed.
- With the blender running on low speed, slowly drizzle in the olive oil until emulsified.
- Taste and adjust salt or lime juice as desired.
- Transfer dressing to a jar and refrigerate for 20 minutes before serving to allow flavors to meld.
