Description
Sweet potato egg casserole with sausage, peppers, and cheese. This is a hearty make ahead breakfast perfect for brunch or meal prep.
Ingredients
- 5 cups sweet potatoes peeled and cut into half inch cubes
- 1 tablespoon olive oil
- 1 pound ground turkey sausage
- 1 half cup finely diced yellow onion
- 1 green bell pepper diced
- 3 cloves garlic minced
- 1 half teaspoon kosher salt
- 1 quarter teaspoon black pepper
- 10 large eggs
- 1 half cup whole milk
- 1 teaspoon dried thyme
- 1 half teaspoon kosher salt
- 1 quarter teaspoon black pepper
- 1 cup shredded mozzarella cheese
Instructions
- Preheat the oven to 400 degrees Fahrenheit.
- Spread the cubed sweet potatoes on a large baking sheet.
- Toss sweet potatoes with olive oil, half teaspoon salt, and quarter teaspoon pepper.
- Roast potatoes for 20 minutes until just tender and lightly browned.
- While potatoes roast, heat a large skillet over medium heat.
- Add the turkey sausage and cook for 6 to 8 minutes, breaking it into small crumbles, until fully cooked and browned.
- Add the diced onion and bell pepper to the skillet with the sausage.
- Cook for 4 to 5 minutes until softened.
- Stir in the minced garlic and cook for 30 seconds until fragrant.
- Remove sausage and vegetable mixture from heat.
- Reduce oven temperature to 350 degrees Fahrenheit.
- Lightly grease a 9 by 13 inch baking dish.
- Spread the roasted sweet potatoes evenly in the dish.
- Top with the sausage and vegetable mixture.
- In a large bowl, whisk together the eggs, milk, dried thyme, salt, and black pepper until fully combined.
- Stir the shredded mozzarella into the egg mixture.
- Pour the egg mixture evenly over the sweet potato and sausage layer.
- Gently shake the dish to help the eggs settle throughout.
- Bake for 30 to 35 minutes until the center is set and no longer jiggly.
- Let the casserole rest for 10 minutes before slicing and serving.

- Cut the sweet potatoes into evenly sized cubes so they roast and bake evenly throughout the casserole.
