Ingredients
- 1.5 cups all-purpose flour
- 2 tablespoons sugar
- 2 teaspoons baking powder
- 0.5 teaspoon kosher salt
- 1.25 cups whole milk
- 1 large egg
- 3 tablespoons unsalted butter melted
- 1 tablespoon olive oil for the pan
Instructions
- Whisk flour, sugar, baking powder, and salt in a large bowl.
- Whisk milk, egg, and melted butter in another bowl until smooth.
- Pour wet ingredients into dry ingredients and stir gently until just combined. Do not overmix.
- Heat a nonstick skillet over medium heat and lightly coat with olive oil.
- Pour about 0.25 cup batter per pancake into the skillet.
- Cook 2 to 3 minutes until bubbles form on the surface and edges look set.
- Flip and cook 1 to 2 minutes more until golden and cooked through.
- Transfer to a plate and repeat with remaining batter.
- Serve warm.
